The cooking traditions of the Marche region are famous for the variety of dishes and the excellent wines. At the Universal Hotel our guests can taste typical local dishes, through a wide range of courses and test their culinary skills trying our RECIPES.


Spicy soy noodles
Recipe Serves 4:100g of soy noodles; 200g of mince pork meat, 1 small celery stick, 1 onion, 1 spoonful of chopped ginger, 1 spoonful of hot soy paste, 1 spoonful of soy sauce, 1 spoonful of sesame oil, half a cup of stock, cooking oil, salt Method:
1) Put the noodles in lukewarm water for 10 minutes to soften them. Heat 4 spoonfuls of oil in the wok. Add chopped ginger and onion until slightly brown. Add the meat, brown it at full heat, and stir regularly to cook consistently.
2) Rinse the noodles and put them in the wok, together with the finely chopped celery, the soy paste, the sesame oil, the soy sauce and the stock. Cook until there is no sauce left. Add salt to taste and serve warm.
Recommended wine: Esino bianco


Beef and ham Cotechino roll 
Recipe Serves 4: 1 Cotechino (500g); 200g beef fillet; 150g of Parma Ham; onions; garlic; olive oil; stock; red wine Method: Boil the cotechino. When half-cooked rinse it and remove the skin. Place the beef fillet on the chopping board and tenderise it. Cover it with the Parma ham, then wrap the cotechino. Tie with cooking string. Take a pan and brown the chopped onions. Add the wrapped cotechino and cover with a mixture of half stock and half red wine. Cook at medium heat and cover the pan with a lid for about an hour. Slice the cotechino placing it on a serving dish, cover with sauce and serve.
Recommended wine: Rosso piceno


Mackerel with bacon
Recipe Serves 4: 4 pre-portioned mackerels; 4 slices of smoked bacon; flour; olive oil; a knob of butter; salt Method: Clean, wash and dry the mackerels. Flour them before frying for 10 minutes in heated oil. Strain the oil using blotting paper. Add a pinch of salt. Melt a knob of butter in a pan, add the bacon and when the fatty parts became transparent wrap it around the mackerel.
Recommended wine: Verdicchio dei castelli di Jesi


Black forest cake
Recipe Ingredients: 100g of flour; 240g of sugar; 50g of cocoa; 3 eggs; 100g of candied cherries; 25g of butter; 250g of cream; maraschino; Kirsh; vanillin Method: Beat the eggs with half the sugar, the vanillin and the melted butter. Sift the flour and 30 g of cocoa. Turn on the oven at 180°C and cook for 30 minutes. Boil the remaining sugar in 125 ml of water for 2 minutes and add some Kirsch. Slice the cake in different layers and fill with the syrup thus obtained, the cream and the cherries soaked in maraschino.
